In search of character

In our quest to immerse you in the complete “British Columbia experience”, our sommelier selects wines among the excellent quality wines available locally. Both he and our chef pair the wines with the daily meal creations. They are  constantly sampling new vintages in search of suitable partners for our seafood dishes. When arranging your charter menu, we also plan the wine pairings, taking into account the preferences you have indicated on your Guest Preference form.

Understated whites

The delicate, subtle flavours of BC seafood are often an ideal match for the array of white wines that we select. From fruity Sauvignon blancs to lively and inspired Chardonnays, BC whites bring out the best in fresh-caught salmon, prawns, oysters or scallops.

Robust reds

As the vineyards in BC’s Okanagan Valley have matured over recent decades, BC reds have become recognized around the world, garnering prestigious awards in the process. From dozens of full-bodied Cabernet sauvignons or Syrahs to more delicate Pinot noirs, we stock a variety of BC red wines to complement our meals.

Ice wines

As a leader in ice wine production, BC ice wines have earned their reputation as spectacular ways to finish a meal. We can arrange a small selection of these to complement the other menu elements.
